Healthy Sweet Potato Apple Bake

A Thanksgiving staple, but enjoyed all year long.
INGREDIENTS

  • 2 medium apples, sliced (honey crips are my favorite)

  • 2 medium (8-9 oz. each) sweet potatoes, peeled and sliced into 1/8th-1/4-inch. rounds

  • 3 Tbsp. grass-fed butter, ghee  divided

  • 1/4 cup water

  • 2 tsp. cinnamon

  • Sea salt

  • Optional – 1/3 cup chopped walnuts, or pecans

  • Optional – 2 Tbsp. pure maple syrup or your favorite sweetner

DIRECTIONS

  1. Preheat oven to 375℉.

  2. In a 9×13 inch casserole dish, combine the sweet potatoes, apples, 2 Tbsp. melted ghee or butter, water, and cinnamon.

  3. Mix until apples and sweet potatoes are evenly coated.

  4. Cover with foil and bake in the oven for 40-45 minutes. (oven temps vary)

  5. After 40-45 minutes, remove foil, add optional nuts, stir and bake for an additional 15 minutes or until sweet potatoes are cooked through to your liking.

  6. Remove from oven, toss or drizzle with 1 Tbsp. melted ghee or butter and dash with cinnamon and a little sea salt.

  7. Optional – Drizzle with a little maple syrup and top with additional chopped walnuts or pecans.
