Cauliflower Rice, Beans & Sausage

This chicken sausage, bean, and cauliflower rice skillet is super delicious and super simple to throw together. Only eight ingredients and cooks in one pan! A nutritious blend of flavors for an easy yummy meal at any time of the week.
No Pork: Use chicken or turkey sausage instead.
More Flavor: Use a spicy Italian sausage or add chili flakes or additional spices instead.
Make It Vegan: Use a vegan sausage and vegetable broth instead.
INGREDIENTS:
5 cups Cauliflower Rice
12 ounces Chicken or Pork Sausage (sliced)
2 Red Bell Peppers (chopped)
2 Garlic (clove, minced)
2 cups Red Kidney Beans
1/2 cup Organic Chicken Broth
1/4 tsp Sea Salt
4 stalks Green Onion (chopped)
DIRECTIONS:
Heat a skillet over medium heat. Add the cauliflower rice and sauté for 5 to 7 minutes. Remove and set aside.
Add the pork sausage to the same pan and cook 3 to 4 minutes until browned. Then add the bell pepper and cook for 3 minutes. Add the garlic and cook for 1 minute more. Then add the kidney beans, chicken broth and sea salt. Stir and cover. Let it simmer for 4 to 5 minutes.
Add the cauliflower rice to a plate and top with the sausage and bean mixture. Garnish with green onions. Serve and enjoy!
